ANEKA NASI: Nasi Ayam Penyet

auwww..auwww..gigih tak? gigih tak? yeah..I know I am. sebenarnya 3 hari sebelum resepi ni saya buat, saya dah makan dah pun bende alah ni kat Wangsa Walk. Balik je Tg. Malim, terus mengidam kembali. apakah? Disebabkan resepi ni 100% saya gunakan resepi dari internet, silalah jenguk resepinya di sini. selamat mencuba!

ANEKA NASI: Nasi Lemak dan Sambal Petai Udang



ASSALAMUALAIKUM

Go back to the tradition, now. Nasi lemak. Staple food of Malaysian. Not Malaysian enough-lah if you do not like to eat it. LOL. I first made this during my picnic with besties few weeks back. the second time I made this when my bestie's family came over Tg. malim to visit her. have a try! 


INGREDIENTS

for the rice

rice (beras)
coconut milk (santan)
pandan leaves (daun pandan)
shallots (bawang merah)
salt (garam)
sugar (gula)
water (air)

for the anchovies sambal (sambal ikan bilis)

anchovies (ikan bilis)
shallots (bawang merah)
onion (bawang kuning)
shrimp paste (belacan)
dried chillies-boiled and pureed- (cili kering direbus dan dikisar)
tamarind juice (air asam jawa)
water (air)
salt(garam)
sugar (gula)


for the petai and prawn sambal (sambal udang petai)

prawns (udang)
shallots (bawang merah)
puree dried chillies (cili kering kisar)
shrimp paste (belacan)
petai 
tamarind juice (air asam jawa)
onion (bawang kuning)
salt (garam)
sugar (gula)

Garnishes 

fried anchovies (ikan bilis goreng)
hard boiled eggs (telur rebus)
fried groundnuts (kacang tanag goreng)
slices of cucumber (potongan timun)
banana leaves (daun pisang)



HOW TO PREPARE

RICE

1. Add in all ingredients prepared for the rice. the amount/level of water and coconut milk is the same as how you prepare normal rice. 

2. let it cook in the rice cooker


ANCHOVIES SAMBAL

1. fry the anchovies. put aside
goreng ikan bilis. ketepikan

2. place a sufficient amount of anchovies, shallots, shrimp paste and water in the food processor and puree them all.
masukkan ikan bilis (yang belum digoreng), bawang merah, belacan dan air ke dalam mesin pengisar dan kisarkannya 

3. sautee the ingredients blended. 
tumis bahan yang telah dikisar sehingga pecah minyak

4. place in  sufficient amount of pureed dried chillies
masukkan cili kering yang telah dikisar hingga pecah minyak

5. add in sugar, salt, tamarind juice and water if the sambal gets too thick
tambahkan gula, garam, air asam jawa dan air jika sambal terlalu pekat

6. place the fried anchovies prepared early and onion slices into the sambal
masukkan ikan bilis goreng yang telah awal disediakan dan hirisan bawang kuning


PETAI AND PRAWN SAMBAL

1. puree the shallots, shrimp paste and water in the food processor
kisar bawang merah, belacan dan air di dalam pengisar makanan

2. Sautee them until they turn brownish before placing in the puree dried chilies 
tumis bahan-bahan tersebut sebelum masukkan cili kering yang telah dikisar

3. add in the tamarind juice, sugar, salt, petai 
tambahkan air asam jawa, gula, garam dan petai.

4. place in the shrimps, onion slices
masukkan udang dan hirisan bawang kuning



HOW TO SERVE:

1. scoop out the rice and place it on a plate covered with pieces of banana leaves
sendukkan nasi dan letakkan di atas pinggan yang berlapik daun pisang

2. garnish with anchovies sambal, petai and prawn sambal, half of hard-boiled egg, fried anchovies, fried groundnuts, slices of cucumber
hiaskan dengan sambal ikan bilis, sambal udang petai, separuh potongan telur rebus, ikan bilis goreng, kacang tanah goreng, potongan timun.

Aneka Mee: Nigella's Inspired Bolognese Spaghetti with Cheesy Meatballs

  This time around, I would like to share one of my favorites. Opted for this few weeks back, now only I do have the time to share the recipe. Anyway, I first discovered this recipe from Nigella Lawson's recipes on the web. As always, several alterations made and hopefully all of you would be intrigued enough to try this. :) Anyways, starting from this post, all my recipes will be shared in dual language. Bahasa Malaysia and English. This is due to the request from one of my blog readers who demanded them to be translated in Bahasa as well. :)

INGREDIENTS

spaghetti 
shallots (bawang merah kecil)
garlic (bawang putih)
tomato puree (puri tomato)
low fat milk (susu rendah lemak)
oregano flakes (oregano) -optional-
parsley flakes (parsley) -optional-
any vegetables of your choice (apa-apa sayur yang anda kehendaki)
black pepper (lada hitam)
salt (garam)
sugar (gula)


for meatballs 
minced meat (daging lembu kisar)
garlic (bawang putih)
bread crumbs (serbuk roti)
an egg (telur sebiji)
salt (garam)
oregano
cheddar cheese (keju cheddar)


HOW TO PREPARE


meatballs 


1. Boil the minced meat till tender, strain and put aside in a bowl
rebus daging lembu kisar sehingga empuk, tapis airnya dan ketepikan di dalam mangkuk

2. Dice thinly the garlic
Potong dadu kecil bawang putih

3. Place the diced garlic, oregano flakes, salt, cheddar cheese, black pepper, white pepper into the bowl containing the boiled minced meat.
masukkan bawang putih yang dipotong dadu, kepingan oregano, garam, keju cheddar, serbuk lada hitam, serbuk lada putih ke dalam mangkuk berisi daging kisar yang telah direbus. 


4. Shape them into balls, put aside before frying them
bentukkan bebola, ketepikan sebentar sebelum digoreng



spaghetti bolognese

1. Boil the spaghetti to al-dente (Cooked enough to be firm but not soft)
rebus spaghetti sehingga masak (al-dente)


2. Dice the shallots and garlic
potong dadu bawang merah dan bawang putih


3. Sautee the diced shallots and garlic till browned before puring in the tomato puree.
tumis bawang merah & bawang putih yang telah dipotong dadu kecil sebelum masukkan puri tomato


4. Pour in the low fat milk, black pepper, oregano, parsley, salt, sugar, vegetables
masukkan susu rendah lemak, lada hitam, oregano, parsli, garam, gula dan sayur


5. Place in the fried meatballs
masukkan bebola daging yang telah digoreng tadi.

ANEKA MEE: seafood tomyam flat noodles


ASSALAMUALAIKUM

I've posted this recipe before back in my 2nde semester of uni if I'm not mistaken. but that was prepared in a rice cooker, for god sake, since I was staying in the college where cooking using the gas cooker was prohibited. LOL

so, here's the recipe prepared in a more proper way. 


ingredients:

* flat noodles a.k.a kuey teow
* shallots
* garlic
* galangal
* ginger
 * bird eyes chilles
* cuttlefish/prawn/chicken/fishball
* lemongrass stalks
* coriander leaves
* asam keping
* tamarind juice
* tomyam instant paste (in the bottle is nicer)
* vegetables ( I used carrot, cauliflower, tomato, baby corn)


how to make:

1. half boil sufficient amount of water in a pot
2. add in all ingredients
3. season it with salt, sugar n seasoning
4. wait till boil
5. serve with blenched flat noodles.
6. garnish with fried shallots and spring onion
7. eat!

Aneka Mee: cheezy baked beans-sauced spaghetti with meatballs

ASSALAMUALAIKUM

had this on last Friday for my dinner. As requested by my lovely friends, Zati and Jos. here's the recipe.


Ingredients

* spaghetti (angel hair/fettucini/normal spaghetti)
* baked beans (the cheese one)
*shallots
*garlic
*oyster sauce
*salt
* seasoning
*oregano/parsley flakes (optional)
* asparagus/broccoli/cauliflower/bell pepper
* instant meatballs


how to make:

1. fry the meatballs. put aside.
2. boil the spaghetti, put aside
3. prepare the sauce:
* sautee the shallots/onions and garlic till they turn brownish
* add in mashed baked beans
*add in oyster sauce
*add in the vege
*add in water if the sauce gets too thick
*add in salt and seasoning
*place in the fried meatballs
4. pour the sauce on the spaghetti
5. drizzle with oregano/ parsley flakes
6. eat!

Sunday morning it is. planned to make this dish since yesterday. so, here you go. the recipe:


Connie Hotdog

Ingredients:

sausage/hotdog 
sausage bun
salad leaves/cabbage
onion
tomato
for the chilli sauce:
  • minced beef meat (handful)
  • shallots/onion (1-2)
  • garlic (2 cloves)
  • carrot (optional)-thinly diced-
  • tomato(optional)-thinly diced-
  • tomato sauce (3 tablespoon)
  • chilli powder (up to preference)
  • baked beans (optional)
  • salt
  • food seasoning
  • water (to be added if the sauce gets too thick)


how to make:

1. fry/boil the sausage
2. put aside
3. boil the minced meat
3.prepare the chilli sauce by sauteing the onion, garlic, diced carrot n tomato. add in the tomato sauce, chilli powder, salt, seasoning, water, baked beans and minced meat. wait till bubbles and put it aside.
4. prepare the sausage. stuff the sausage bun with the salad leaves, tomatoes, onion, sausage. pour the chilli sauce prepared just now on top. 
5. eat!

ingredients

* any vegetable you want (I used tomato and salad leaves)
*fishballs/meatballs/chickenballs/chicken popcorns/shredded chicken meat (boil/fry)
*sliced onion
*Thousand island mayonnaise

how to make:

1. set the vege,onion and balls in a bowl
2.thoroughly drizzle the Thousand island mayonnaise on top
3.eat!

DESSERT: Pineapple Tart and Soft Banana Cookies

ASSALAMUALAIKUM..

hey o hey o... All this while, when it comes to desserts, I prefer making those which do not need any baking. Why? The truth is, I NEVER tried baking. surprised? Indeed, I had never tried baking, at all. But, I guess I've reached the stage where baking should no longer be a great fear. HAHA.So, today I would like to share a recipe. Actually, for both Pineapple tart and Soft Banana Cookies, they use the same dough. So, today's recipe will enable you to create any sort of cookie of your preferences using the same dough. :) It's up to your creativity to try and error. 



INGREDIENTS:

soft butter -I used buttercup- (1 whole cube )
a pinch of salt
2 pinches of granulated sugar
2 tbsp of custard flour
500 g of plain flour -I used cap sauh-
1 tbsp of corn starch
hard boiled egg (just take the yellow part)
an egg (whisk it) -to be brushed on the surface of the shaped dough before bake-


HOW TO MAKE THE DOUGH:

1. Add in all the ingredients and knead 'em thoroughly by hand. 
2. shape it into balls 
3.put any fillings or toppings you like
4.bake at 180 degree celcius for 6-8 minutes or until it is done. or simply use the automatic cookies button if your microwave happens to have got it (20 minutes)

yeah~that's it.

Now..it depends on you what sort of filling or toppings you want to have. You can put any jam you want, like me, I put pineapple jam topping. tadaa~ you got pineapple tart. yeah, you can use the mould to make kuih semprit to get the normal shape of pineapple tart. as for me, simplicity is always the best. godek bulat2, leperkan and simply place the jam on top of the dough. done!

1. I used my dad's home made pineapple jam. you can simply get the ready made one at any store.
2.place it on top of the dough,
3. brush the whisked egg on the surface of dough
4. bake!

soft banana cookies

1. cut the banana to small wedges or any shape that could fit in the balled dough.
2.roll 'em carefully and shape it into any shape you like.
3. drizzle chocolate sauce on top of it
4.sprinkle 2 pinches of crushed crackers on top of  it
5. brush the surface with whisked egg

DESSERT: Bubur kacang hijau with durian

ASSALAMUALAIKUM...



 

Do you smell something? sniff...sniff..sniff.. Yeah, it's the durian smell. Do you love durian? I reckon there's some of you who ardently love durian while some are just like me, so-so. Since most of people (reckon so..) know that I am so not into the fresh durian (exception for tempoyak and bubur durian), I am here now sharing with you a simple bubur kacang hijau with durian. made it last night. Yeah..last night. LOL. The whole house smelled durian-ish now. Blame who?Yeah..you. :D Anyways, this bubur is suitable to be eaten both hot and cold. It can be eaten with pulut and also bread too, depending on your preferences. 


Ingredients

1. durian (4-5 ulas) -depending on the size-
2. kacang hijau (sepeket kecil)
3.gula melaka 
4.santan
5.secubit garam
6.daun pandan -2 helai- 


How to Make it?

1. Place your green beans into the pot with approximately 3 cups of tap water.
                                         

 2. Let it simmered. This might take some times before the beans are fully popped out, indicating that they are cooked.
3. Once they are cooked, put in the gula melaka. Stir gently until the sugar melts.
4.Pour the coconut milk into the pot, slowly. Keep on stirring. 
5.Put in few pinches of salt and pandan leaves in. Pour in water if it is too thick.
6. Once the bubur is boiled, put in the durian
7. Keep on stirring until the durian flesh blends with the bubur.
8. Serve!

DESSERT:simple chocolate balls

ASSALAMUALAIKUM...


Muahahahaha..let's laugh together. I violated my own oath not to be on the line today. Food drives me crazy. I have to post this recipe on this blog because..because..because I feel like posting it. No question, please. full stop. Anyways, since i still have the remaining of melted chocolate in the fridge (baki from the chocolate truffle I made the other day), I decided to not wasting it yet use it to make the next dessert: Simple Chocolate balls. Simple ke? I reckon so. So, try it. This probably will be one of my kuih raya's menus. Haha. Jimat..jimat..


Ingredients:

Marie biscuits or any graham biscuit (20-30 pieces)
nestum (4 tablespoons) 
peanut butter (3-4 tablespoons)
dark chocolate (1 bar) -melt it-
fresh milk (up to u, as long as the dough wont become soggy)


How to Make it?

1. place the Marie biscuits in a plastic. Smash 'em until they become crumbs.
 2. Add in other ingredients
this is the without-chocolate version

                                       
3.Mixed thoroughly and shape it into balls

this is the 'with chocolate' version


4. place 'em in the fridge. They are ready to eat when u feel like to.  :)

LAUK:ayam bakar special

ASSALAMUALAIKUM...

As I promised you earlier on, this is another dish prepared during the BBQ night my classmates and I had last Tuesday's night. Why not you try it yourself this time around. Probably, this can be your next activity with family and friends, aite? Anyways, I am bad in measurement. I usually apply the ''campak-campak' technique, meaning that I just simply put the ingredients in, without any rigid measurement. HAHA. so..for this recipe, I'll just list out the ingredients you need.  It is purely up to you to decide on how much you should put in those ingredients needed. Probably, it depends on how many people you want to feed for, okay? :)


Ingredients:

1. chicken (any part will do. We took the drumsticks and wings and few breasts), you can even grill the sausages with this marinade.
2.  shallots/onions
3. garlic
4. tumeric powder
5. galangal (lengkuas)
6. ginger
7. spices (jintan manis, jintan putih, biji ketumbar) -use the packet ones, better than using the powder ones-
8. lemon grass
9. brown sugar
10. bird eye's chillies (cili api) -optional-
11. salt
12. water (to blend the ingredients)
13. oil + few stalks of lemongrass which the tips have been smashed

How to Make it?

1. clean the chickens thoroughly. You might want to get rid of the bad smell with lime.
 2. blend ingredients 2-12 
3. Pour out the blended ingredients on the chicken. marinate them as long as you want., The best would be a night.
4. Heat up your grill
5. grill 'em until they are well cooked (30-45 minutes) -depending on the size of the chicken-
6. while grilling, drizzle the chicken with ingredient no. 13 (like those pakcik sate do :) )

ANEKA ROTI: garlic bread

ASSALAMUALAIKUM...

This is actually one of the menus on my class' BBQ party last Tuesday night. More menus my friends and I made on that very night will be updated here, soon. Anyways, this is a very simple dish to prepare. You can either grill or toast it or...eat it just like that (without toasting or grilling the bread). Up to your preferences. :)


Ingredients:

1. French bread (the long hard ones, you know which one, dont u?)/wholemeal bread
2. garlic (2-3 cloves)-lagi banyak lagi sodap-
3.butter (use butter, it'll be tastier than using margerine)
4. parsley flakes
5.ground black pepper (if tak ada serbuk, yang bulat2 pun boleh, tumbuk haluih-haluih)
5. salt


How to Make it?

1. peel off the garlic's skins. 
2.grill it or put it on a hot pan (without oil) and stir gently until it turns brownish
3.let it cool at room temperature
4.finely chop it. halus-halus...
5.add butter, parsley flake, black pepper and salt with the finely chopped garlic
6.mix them well
7.put it in a container


8.ready to be spread. u can keep it in the fridge and use it whenever you want.
9.spread on your bread
10.grill or bake it like this (put on a hot pan without oil).

DESSERT:cream cheesy chocolate truffle

ASSALAMUALAIKUM...

CAUTION! This is not a must-go-for recipe for those who are on a diet. LOL. 

My exam is nearing. I seriously had no mood to study. Frequent hunger drives me crazy like...argh!!!!!! so, to the kitchen I went. Anyways, this can be a good gift for your friends or even your loved ones you know? by spending less than RM40, you can feed many mouths with this. fact about me: I DON'T REALLY EAT SWEET STUFFS. but why did I make this dessert? BOREDOM. yeah..I'm weird. Now, let us start!


Ingredients:

1. oreo biscuit (3 packets) -I removed the cream because I dont like it to be too sweet-
2.  250 gram of cream cheese (of any brand)
3. cooking chocolate (better to choose semi sweet or dark chocolate)
4. cocoa powder/nuts/chocolate rice/white chocolate (any topping u like)

here are some of the ingredients (forgive me for not taking all the ingredients' photos)

crushed oreo (remove the cream if u dont like it to be too sweet)

cream cheese




How to Make? 

1.  Place the biscuits in a plastic, crushed it by using..urm..anything. lesung batu also can. LOL


2.  place the crushed oreo in a container

lagi hancur lagi bagus


3. In the meantime, melt the chocolate using double boiling technique/place it into the microwave.
double boiling is a technique where you place a bowl/container that can absorb heat easily on top of a pot containing the super hot water. like this....
let it stay on the pot to prevent the chocolate from coagulating
now...get back to the dough..


 5. Put in the cream cheese

 
 6. knead the mixture of the crushed oreo and cream cheese thoroughly. uli jangan tak uli.

7. place it into the fridge for about 25-30 minutes


8. remove it from the fridge and shape it into balls

macam ma'jun, eh? LOL
9. put in the fridge for 10 minutes

10. take it out from the fridge. 

11. prepare on the table these things

that cocoa powder is optional. You can opt for nuts/chocolate rice/any topping u prefer

now is the fun part.

12. cover the oreo balls with the melted chocolate like this


13. cover it with cocoa powder after that


14. place it in a container or a tray and keep in the fridge to let the chocolate cover hardened

probably keep 'em for 10- 20 minutes

finally...eat 'em!



it is hard outside but soft, creamy and sweet inside!

ANEKA ROTI: simple murtabak maggi

ASSALAMUALAIKUM...


My class today was a bit packed so the desire to eat increased as how the tiresome hiked. Reached home from campus, my stomach growled, screaming for food. Since I didn't feel like eating rice, i prepared something simple. Oh yeah, thanks to my sweet housemate, Gie for she willingly provided 2 eggs and 2 packets of instant noodles to be used. So, as the reward, I treated her together with few of my other housemates. Sharing is caring, aite?  <3

so..mari buat murtabak maggi.

bahan-bahan:
(untuk 3-4 orang makan)

  • bawang merah kecil (2 biji)
  • bawang putih (2 ulas)
  • sosej/isi ayam/daging cincang 
  • cili api -optional-
  • maggi dan perencahnya (2 peket)
  • telur ayam (3 biji)

cara-cara:

1. rendam maggi sehingga lembut. angkat dan ketepikan.
2.gorengkan hirisan sosej bersama hirisan bawang merah, bawang putih dan cili api.angkat dan ketepikan
3. di dalam satu mangkuk lain, pecahkan telur, campurkan perencah maggi, pukul.
4. masukkan maggi dan bahan 2. ke dalam mangkuk berisi telur. gaulkan rata
5.panaskan satu sudu minyak dalam kuali dan ratakan di sekitar kuali.
6.masukkan campuran di no. 4. tadi dan tekan-tekankan mengguanakn sudip supaya maggi dan telur jadi lebar
7. setelah agak masak telurnya, balikkan murtabak dan biarkan bahagian seterusnya masak.
8.potong ikut suka hati, hiaskan dengan daun bawang dan daun sup
9.makan bersama sos semasa masih panas.

DESSERT:rocky road choco bar

ASSALAMUALAIKUM...

Yeah, I've just done with helping my friend preparing her friend's birthday gift. She asked us to make her a simple dessert, yeah..with she helping me la kan.hee..so.. I came up with the idea to make this..this thing la..the ones I wanna share. anyways, the original idea was from Nigella, yeah..my long lost friend. haha..motiff sgt. She made it with marshmallow in it, but since I couldnt find marshmallow, I made it my own version, You would probably be thinking like.. "eh..macam kek batik je." naah, not the same. kek batik is soft, this one..rock..yeah!rock bebeyh..try it la, then you know how it tastes like..kan? presenting...


Rocky Road Choco Bar

Bahan-bahan:
  • dark choco bars (2 bars)
  • unsalted/usual butter (1 bar) 
  • golden syrup (3 tablespoons) 
  • biskut marie (15-20 keping) 
  • nuts/almond/marshmallow/raisins (segenggam) -u can put anything u want- 

cara-cara:

1. cairkan coklat, butter dan golden sirap di atas sauce pan atau kuali biasa menggunakan api kecil.

2. setelah cair, biarkan seketika. asingkan 3 senduk besar coklat itu ke dalam mangkuk lain.
3. letakkan biskut marie di dalam plastik bersih, hancurkan ia guna lesung batu atau penggiling doh. jangan terlalu hancur

4. di dalam bekas lain, letakkan biskut marie hancur itu dengan nuts/marshmallow/raisin. gaulkan rata.

 



5. tuangkan coklat di dalamnya dan gaul rata.



6. letakkan ia ke dalam loyang yang telah dilapis dengan plastik pembalut makanan.

7. ratakan campuran itu dan tekan sedikit dengan senduk agar mampat.
8.tuangkan coklat yang telah diasingkan tadi ke atas permukaan bahan dalam loyang agar keseluruhan chocolate bar akan lebih umpphh!! 
9. masukkan ke dalam peti sejuk (not the beku part) .  let it be for 2 hours and above. lagi lama lagi sedap. 

and then you are ready to ngap!
